How to make mushrooms curry
To make a mushroom curry, you will need:
Ingredients:
1 tablespoon vegetable oil
1 medium onion, finely chopped
1 tablespoon grated fresh ginger
1 tablespoon minced garlic
1-2 teaspoons ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground turmeric
1/4 teaspoon cayenne pepper (optional)
1 pound mushrooms, sliced
1 cup water or vegetable broth
1 (14.5 ounce) can diced tomatoes, undrained
1/2 cup coconut milk
Salt and black pepper to taste
Fresh cilantro leaves for garnish (optional)
Instructions:
- Heat the oil in a large saucepan over medium heat. Add the onion and cook until it is softened, about 5 minutes.
- Add the ginger, garlic, cumin, coriander, turmeric, and cayenne pepper (if using) to the saucepan and cook for 1 minute, stirring constantly.
- Add the mushrooms to the saucepan and cook until they are tender, about 5 minutes.
- Add the water or vegetable broth, diced tomatoes, and coconut milk to the saucepan and bring the mixture to a boil.
- Reduce the heat to low and simmer the curry for 20-30 minutes, or until the mushrooms are very tender.
- Season the curry with salt and black pepper to taste. Garnish with fresh cilantro leaves, if desired.
Serve the curry hot, over rice or with naan bread. Enjoy!
